As much as I love home cooked food I also Love Egg McMuffins at MacDonald’s. My grandparents were always saying why do yo eat that garbage when they could make me ones just as good at home. Well they never could make it just as good, but they did make something else that I fell in love with. I was also a fan of Eggs Benedict but I never liked the hollandaise. Their egg sandwich morphed into a pseudo Eggs Benedict that I request at every diner or breakfast joint I can. At a diner I frequented in New Haven, CT, they made it perfectly for me. The waitress even said to me once, “You were spoiled by someone, weren’t you?” I looked her straight in the eye and said, “Absolutely!”
When I cook these for my wife they morph a bit more because I add carmelized onion for that extra special something.
- 4 Eggs
- 4 Slices of Bread
- 4 Slices of Swiss or Ementhaler Cheese
- 1 Medium Onion
- 2 SLices of Ham
- 4 Tsp Butter
- 1/2 Stick butter
- 1/4 Cup of Chicken Stock
Ok to kick this off preheat your oven to 200 degrees celsius on the double grill element. Next take your 1/2 stick of butter and melt it in a pan on medium high heat. Place your sliced onions in the pan and cook until brown. To add to this process I take a 1/4 cup of chicken stock and place in pan as the pan begins to dry out. I scrape the bottom of the pan to get up all the pieces and toss the onions around in it. Then before the pan gets to dry again I add my ham.
The ham should be somewhat thick. Definitely not sandwich slices you buy in a store pre packaged, unless that is all you really have. I like a thick cut. While the ham is heating and the onions continue to carmelize, toast your bread and spread 1Tsp of butter on the top of each slice.
When the bread is finished toasting and the ham and onions are complete add your eggs to the same pan and cook sunny side up. Then we are going to start to build are delight. Place the heated ham on your toasted buttered bread.
Then place the carmelized onions on top of the ham, the eggs on top of the onions, and finally place a slice of cheese over each egg. Place this is the oven close to the top and heat until cheese melts. Pull out and feast upon one of my favorite breakfast treats.
This breakfast is just a great way to start a day off. Especially when you have the day off and can take a little nap after eating.
