Caprese Scramble with Sausage & Mozzarella

Saw a mouth-watering scrambled egg dish over at “Leftovers For Lunch,” that I wanted to try out. Made a couple of changes because as you know I gotta have some meat with my eggs.

Ingredients:

  • 1/2 a Medium red Onion Sliced
  • 2 Tsp Minced Garlic
  • 2 Tbl Butter
  • 1 Tbl Chopped Sun Dried Tomatoes
  • 4 Breakfast Links of Sausage Sliced
  • 1/4 Cup of Fresh Chopped Basil
  • 6 Slices of Buffalo Mozzarella
  • 2 Eggs
  • Pinch of Pepper

Melt your butter in your pan and add the onions and stir until all are coated with the butter. Cook the onions until they start to become translucent and then add your garlic and continue to cook. When the onions begin to brown add your sun-dried tomatoes and your sausage slices and a pinch of pepper. Stir until mixed together. Take your eggs and whisk with a fork until completely blended and put to the side.

If the pan begins to dry out add a little water and stir being sure to scrape the bottom of the pan. Cook for a couple of minutes and then add your basil leaves and 4 slices of your buffalo mozzarella and mix until incorporated. Add your beaten eggs and scramble away.

When completed garnish with the remaining two slices of your buffalo mozzarella and a basil leaf. Truly a delicious delight to start any day or even as an afternoon snack. Hell, why not even a late night snack. Thanks to “Leftovers For Lunch” for the inspiration. I hope they don’t mind that I added sausage 🙂
