Shrimp Stuffed Bannana Peppers with Onion & Swiss Over Fried Potatoes

I originally bought these peppers to make chicken salad, but I used the chicken for the salad in last night’s dinner, “Chicken Sandwich with Roasted Red Peppers & Carmelized Onion,” instead of the chicken salad. That gave me a perfect opportunity to do something else with the banana peppers.


  • 6 Medium Banana Peppers
  • 1 Medium Red Onion Diced
  • 1 Medium Yellow Onion Diced
  • 2 Medium Onions SLiced
  • 5 Medium Potatoes
  • 1 Tbl Minced Basil
  • 8 Garlic Cloves Chopped
  • 1/2 Cup of Spinach chopped
  • 1/4 Cup of Butter
  • 1/4 Cup of Extra Virgin Olive Oil
  • Pinches of Salt and Pepper

Take your banana peppers and cut the tops off, remove the seeds and veins. In your saute pan place your butter, onions, and garlic with a pinch of salt and pepper. Cook until onions start to become translucent and then add your chopped spinach and rock shrimp stirring to incorporate the ingredients.

when the shrimp is almost done add your swiss cheese and cover until cheese begins to melt. Stir to incorporate and the remove from stove and set to the side. When the stuffing has cooled enough for you to handle you can begin stuffing the peppers. Place the stuffed peppers in a baking dish and place in oven at 225 degrees celsius in the center and cook until peppers are done.

In your saute pan place a 1/4 cup of olive oil and layer half of your sliced potatoes on the bottom with half off your slice onions. On top throw a pinch of salt and pepper. Repeat the process with the remaining potatoes and sliced onions. Cook on medium high with a lid over top. Flip the contents of the pan when the bottom potatoes start to brown. You will need to stir this every 2-3 minutes.

When the potatoes are nice and pan-fried remove from stove and place on a plate. Take your stuffed banana peppers and place on top of the fried potatoes. There are lot of nice flavors going on here and I am already thinking of the different variations that could be done with this tasty dinner.

Don’t forget today is national pound cake day so I will be celebrating with a pound of steak. Besides, when was the last time you even had pound cake?

    It’s been ages since I had good pound cake! (Though I won’t turn the idea of steak down, oh no!)

    As to the recipe, sounds lovely – never had stuffed peppers with seafood (usually cheese and/or meat and rice). I wonder if it would work similarly to shrimp with artichokes?
