Breakfast does not have to be a gourmet extravaganza in order for you to enjoy it. Although I have seen some great breakfasts this week posted here, here, and here. Sometimes food that is just straightforward is perfect for the day, and today that breakfast is Steak and Eggs with home fries and toast. Nothing exotic about this but it certainly is a crowd pleaser when the gang is hungry and the fritatta you made yesterday isn’t going to cut it.
- 2 6oz Sirloin Steaks
- 2 Eggs
- 3 Medium Potatoes diced
- 2 Slices of Toast
- 2 Tbl of Grape Jelly, Use what ever your heart desires.
- 1 Small Onion sliced
- 4 Tbl Olive Oil
- Pinch of Salt
- Pinch of Ground Chili Flakes
- 1 Tbl Paprika
- 1 Tsp Vegetable Seasoning
In a small saute pan put 2 tbl of olive oil and heat on medium high heat. Then add your potatoes, Paprika, onions, a pinch of salt and a pinch of ground chili flakes. Cook covered until potatoes are slightly crusty on the outside but tender on the inside, stirring every 2-3 minutes.
For your toast just choose your bread and your jelly, whatever you desire, and make it happen.
In another sauce pan add the rest of the olive oil and heat on medium high heat. Place your steak on with a tsp of vegetable seasoning and a pinch of chili flakes and cook to desired temp.
The eggs place in pan before steak is done and cook however you want them. I tend to like sunny side up, but they’re your eggs, do whatever you want. For mine I added some ground chili flakes.
Simple! Rewarding! Delicious! What more do you need.
