Open Faced Egg & Pork Sandwich

Those of you who know me or come here often know I love breakfast. So when making my breakfast I usually gravitate towards ham, sometimes Steak, and if I am out of those then bring in the bacon. But today I am out of all three!

Well there are two boneless pork chops in the fridge. I go back to work today after a two week staycation, (That when you have your vacation at home) so I won’t be able to cook them in the next couple of days. I guess I’ll just have to use them for breakfast.

Ingredients:

  • 2 Boneless Pork chops
  • Several pinches of crushed chili flakes
  • 2 slices of Swiss Cheese
  • 2 Eggs
  • 2 pieces of Toast
  • 1 tbl olive oil

Take your pork and pound out until size has doubled. Sprinkle your crushed chili flakes over both sides and then place in heated pan with the olive oil on medium to high heat.

When you flip the pork for the first time add your cheese over top and put your eggs in the pan. When all is done place your pork on top of your toast and the eggs on top of the pork and cheese. It does not get any easier than this to have a hearty breakfast.

    • Thanks for dropping by. It is a bit of a greedy breakfast, but I love a greedy breakfast. I am living in Europe right now so I get 6 weeks of vacation a year, so if you want to score it, you gotta come over here. 🙂
